    This baby roasted red potatoes recipe is so easy to make and made with only a handful of ingredients that are easy but bold and flavorful. All you need is salt–the rest is for serving!

    • Red Potatoes – These are easy to roast in the oven and create delicious soft and crispy textures once they are cooked. Feel free to use any kind of baby potato.
    • Olive Oil – Extra virgin olive oil is fragrant, easy to use, and full of robust flavors. If you do not have olive oil, then you can use any other kind of vegetable oil.
    • Lemon – Fresh lemon zest is added to these potatoes to give them a hint of citrus and fresh zesty flavors. You can even spritz some lemon juice on the potatoes!
    • Za'atar Seasoning – This classic blend of spices and herbs is a tasty ingredient providing extra flavors specifically for most Middle-Eastern and Indian recipes. Za'atar seasoning usually conisists of dried marjoram, toasted sesame seeds, oregano, thyme, and sumac.
    • Salt – Season these potatoes until they taste how you want them to. Any kind of sea salt will work.

    • Tahini Sauce – I like to make my own creamy tahini sauce but storebought sauce is fine. The tahini sauce is perfect for dipping the potatoes!
    • Pistachios – Freshly chopped pistachios provide a natural nutty sweetness that allows these potatoes to be unique and tasty.
    • Pomegranate Pearls – Juicy pomegranate pearls are sweet, tangy, and provide bursts of tart and fruity flavors that are balanced with the savory ingredients.
    • Fresh Parsley – Chopped fresh parsley is a delicious herb great for adding color and flavor to these roasted red potatoes. Switch things up and use different fresh herbs for different flavors.

    How To Make Roasted Red Potatoes with Zaatar?

    These za'atar lemon potatoes are perfect and seasoned to perfection with simple ingredients. Serve these potatoes with all types of recipes!

    First, preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper or foil.

    In a large bowl, place the rinsed and halved potatoes, olive oil, fresh lemon zest, za'atar seasoning, and salt in it and toss until the potatoes are coated.

    Next, spread the seasoned red potatoes on the baking sheet in a single layer. Spreading the potatoes across the baking sheet give them plenty of room to cook.

    Roast the potatoes in the preheated oven for 30 to 35 minutes until they are fork-tender and a golden color. You can broil the potatoes for the last four to five minutes to make sure they are crispy enough.

    Remove the cooked potatoes from the oven and allow them to rest for a few minutes before serving.

    Serve the potatoes with fresh parsley as is or transfer them to a serving platter with nutty tahini sauce topped with pomegranate pearls, parsley, and chopped pistachios.

    Should you peel the red potatoes before roasting?

    You do not need to peel the skins off the potatoes before roasting but be sure to rinse them really well. You can remove the skins off the potatoes if you would like!

    Za'atar Roasted Red Potatoes Recipe

    Tender and crispy Za'atar Roasted Baby Red Potatoes are made with lemon and full of delicious flavors! Seasoned with sea salt, olive oil, and earthy rich za'atar, these roasted small red potatoes are easy and perfect for dinner.

    Ingredients
     

    • 1½ Pounds Baby Red Potatoes (halved)
    • 2 tablespoons Olive Oil
    • Zest of One Lemon
    • 2 tablespoons Za'atar
    • ¾ teaspoon Fine Sea Salt

    For Garnish/Serving

    • 3-4 tablespoons Tahini Sauce
    • ¼ cup Pomegranate Pearls
    • 3 tablespoons Pistachios (roughly chopped)
    • Fresh Parsley (chopped)
    Prevent your screen from going dark

    Instructions

    • Pre-heat the oven at 400°F and line the baking sheet pan with parchment paper (or foil).
    • In a large bowl, places the red potatoes, olive oil, lemon zest, zaatar seasoning and salt. Toss well to coat.
    • Now, spread the tossed potatoes on line baking sheet pan in single layer. Roaste for 30-35 minutes or until golden and fork tender (last 4-5 mintes of broiling gives nice crispy potatoes).

    For serving

    • Take it out of the oven and allow it to rest for few minutes (you can dish out the potatoes, sprinkle parsley and serve as is).
    • Transfer on to a serving platter, drizzle tahini sauce, top with chopped pistachios and pomegranate pearls, sprinkle chopped fresh parsley and serve right away!
