How to make peach chutney?
Sauté Whole Spices and Aromatics

Step 1: Heat 1½ tablespoons oil in a pan on medium heat. Add ½ teaspoon cumin seeds, ½ teaspoon fennel seeds, and 2 large grated or minced garlic cloves, and fry for 30 seconds until fragrant.

Step 2: Add ½ small chopped onion and cook for 2-3 minutes until softened.
Add Peaches and Seasoning

Step 3: Add 1.1 lb of peeled and chopped peaches, ½ teaspoon sea salt, and ¼ teaspoon freshly ground black pepper. Cook for 2-3 minutes, as the fruit begins to release its juices.
Toast the Ground Spices

Step 4: Add ½ teaspoon ginger powder, ½ teaspoon cinnamon powder, ¼ teaspoon clove powder, ¼ teaspoon turmeric, and ½ teaspoon red pepper flakes, mixing well. Cook the spices with the peaches for 1 minute to bloom their flavors.
Simmer with Vinegar and Sugar

Step 5: Add ¼ cup apple cider vinegar and ¼ cup brown sugar, stirring to combine.

Step 6: Cover the pan and let it simmer for 10 minutes until the peaches are soft, stirring every 3-4 minutes.
