- 1½ tablespoons oil
- ½ teaspoon cumin seeds
- ½ teaspoon fennel seeds
- 2 large garlic grated or minced
- ½ small onion chopped
- 1.1 lb peaches peeled, and chopped
- ½ teaspoon sea salt or to taste
- ¼ teaspoon freshly ground black pepper or to taste
- ½ teaspoon ginger powder
- ½ teaspoon cinnamon powder
- ¼ teaspoon clove powder
- ¼ teaspoon turmeric
- ½ teaspoon red pepper flakes or to taste
- ¼ cup apple cider vinegar
- ¼ cup brown sugar or white sugar
Heat 1½ tablespoons oil in a pan on medium heat. Add ½ teaspoon cumin seeds, ½ teaspoon fennel seeds, and grated or minced 2 large garlic and fry for 30 seconds.
Now, add chopped ½ small onion and cook for 2-3 minutes until is softened.
Add the chopped peaches, ½ teaspoon sea salt, ¼ teaspoon freshly ground black pepper and cook for 2-3 minutes.
Add ½ teaspoon ginger powder, ½ teaspoon cinnamon powder, ¼ teaspoon clove powder, ¼ teaspoon turmeric, ½ teaspoon red pepper flakes, and mix. Cook the spices with the peaches for 1 minute.
Add ¼ cup apple cider vinegar, ¼ cup brown sugar, and mix. Cover the pan and let it simmer for 10 minutes until the peaches are soft. Give a stir every 3-4 minutes. Uncover and check for the desirable consistency. You may mash some of the pieces while still cooking.
Remove the pan from heat and set it aside to cool at room temepartaure. The chutney will thicken further as it cools down.
You may serve it lukewarm or cold, as desired. Keep the peach chutney refrigerated until needed.
- I recommend sweet, ripe peaches for the best flavor. You may use slightly overripe fruit, but avoid heavily bruised peaches.
- Planning to store the chutney in your jars? Just make sure to sterilize your glass jars properly before filling.
- For some crunch, try adding chopped walnuts, pecans, almonds, dried cranberries, raisins, or chopped dates near the end of the recipe.
- Are you looking for ways to get some other fruit used alongside your peaches? Then try plums, apricots, mangoes, pears, or apples. These kinds of fruit really mix well!
- You can also trade out apple cider vinegar for white vinegar or malt vinegar. All are able to be in this recipe and still work well.
- Keep your relish stored in an airtight glass jar under refrigeration for up to 3 to 4 weeks.
- For long-term storage, you can freeze it for up to a year in a clean freezer-safe container.
