How to make seed crackers?
Grind the Flax Seeds

Step 1: Place ⅓ cup flax seeds in a coffee grinder or a high-speed blender jar.

Step 2: Pulse for 30-60 seconds until crushed to form a uniform coarse (to fine) powder.
Combine Dry Aromatics and Hot Water

Step 3: Transfer the prepared flaxseed meal to a large heat-proof bowl. Add ¼ cup garden cress seeds (halim) or chia seeds, 2 tablespoons psyllium husk, 1 teaspoon sea salt, ¼ teaspoon freshly ground pepper, 1 teaspoon oregano, ½ teaspoon garlic powder, ¼ teaspoon turmeric, ½ teaspoon smoked paprika, and ½ teaspoon red pepper flakes, then mix.

Step 4: Add 2½ cups hot water and stir to combine. Cover and let it sit for 10 minutes until the mixture thickens to a gel-like (gooey) consistency. Meanwhile, preheat the oven to 325℉ (160℃). Line a baking sheet with parchment paper, and lightly grease it with avocado oil, melted butter, or ghee (you may skip greasing for completely oil-free crispbreads).
Mix in the Whole Seeds

Step 5: Add 1 cup raw pumpkin seeds, 1 cup raw sunflower seeds, and 1 cup sesame seeds to the bowl with the gelatinous binding mixture.

Step 6: Mix everything well to form a cohesive dough mixture.
Spread the Dough, Bake, and Score (Optional)

Step 7: Transfer the mixture to the prepared baking sheet (I typically use two sheet pans). Using your hand or a spatula, spread it evenly into a thin layer.
Aim for an even 3-4 mm layer thickness while spreading (4 mm is perfect, avoid more than 5mm). The thinner you spread, the crispier the seeded crackers are; an even thickness prevents thick and soft centers.

Step 8: Bake in the oven for 55-65 minutes.
Precut step for a neat look: Take out the sheet halfway through baking and cut into square or rectangular shapes using a sharp knife or a pizza cutter. Pop the sheet back into the oven and bake until golden and crisp, keeping an eye toward the end to avoid burning. If you prefer rustic pieces after baking, then simply skip this precut step.
Cool and Break

Step 9: Remove from the oven and let cool completely on the pan. They will turn significantly crispier as they cool down! Once baked and cooled, break them into pieces along your cut lines, or break them into uneven, organic pieces if you skipped the scoring step. Serve as is or alongside your favorite spread.
Expert tips
- I always prefer to grind whole flax seeds to a flaxseed meal myself right before baking to avoid spoilage; no store-bought meal required!
- If you have no psyllium husk on hand, simply replace the exact same amount with additional ground chia seeds or ground flax seeds.
- Use a large baking sheet, and if making in bulk, definitely use two or three pans as needed so the dough isn't crowded.
- Lightly wet your spoon, spatula, or hands with cold water to spread the sticky seed mixture effortlessly without it sticking to your tools.
- You may score the spread mixture right before popping it into the oven, but I prefer to do it halfway through baking when the dough has partially set.
