Sparkling Water: Some bubbles are all you need to complete your delicious and light mocktail! You can also use club soda or your preferred carbonated beverage, I just suggest using something with no flavor or very minimal flavor that’ll complement the flavors already in this recipe.
How to make pineapple mojito?
Step 1: Blend
In a blender, add your 16oz. fresh pineapple chunks, 2 teaspoons ginger, 2 tablespoons lime juice, 16-20 mint leaves, and ½ cup simple syrup.

Blend everything into a smooth purée.

Step 2: Muddle
In a tall drinking glass, add a few lime slices and mint leaves. Muddle them gently to release the flavor of the mint leaves.

Step 3: Add Purée
Pour the 4-5oz pineapple and ginger purée into your glass along with a few ice cubes.

Step 4: Add Sparkling Water
Top your drink with sparkling water or club soda and give it a quick stir to combine. Serve immediately and enjoy!
