    This Pineapple Mojito Mocktail is a light and refreshing drink recipe that’ll keep you hydrated and satisfied all summer long! Made with a freshly blended pineapple ginger purée and sparkling water, this simple mocktail recipe is the minty, sweet, and tangy drink of your dreams!

    Why we love this pineapple mocktail?

    We love a refreshing beverage in this house, so you can imagine how much we adore this minty, bubbly, and unbelievably delicious pineapple mocktail! It has the perfect balance of flavors and doesn't take long to make at all.

    Next time you're out at the pool or grilling dinner and want something to sip on, you can whip up this drink in a matter of minutes. Just blend the ingredients, top with sparkling water (or club soda), and you have yourself the perfect drink to cool you down.

    This mojito is made with pineapple (if you're in a pineapple mood, try this grilled pineapple recipe!) which gives it a tropical twist, but you can always swap out the fruit for another. Give it a try and let me know if you and your loved ones enjoy this mocktail as much as we do!

    Ingredients you'll need

    Recipe ingredients: Pineapple chunks, lime juice, lime slices, ginger, mint, simple syrup, sparkling water.

    Fresh Pineapple Chunks: Fresh is best, but you can also use frozen if you want an icy mojito. Frozen pineapple will also keep your drink cooler for longer without watering down your drink. 

    Ginger: Minced ginger will add a gentle hint of spice to your mojito and perfectly complement the tropical fruitiness. Plus, it’s great for digestion! 

    Lime Juice & Mint Leaves: A splash of citrus & a hint of mint are essential for a flavorful and refreshing mojito. 

    Simple Syrup: For a smooth layer of sweetness!

    Sparkling Water: Some bubbles are all you need to complete your delicious and light mocktail! You can also use club soda or your preferred carbonated beverage, I just suggest using something with no flavor or very minimal flavor that’ll complement the flavors already in this recipe. 

    How to make pineapple mojito?

    Step 1: Blend

    In a blender, add your 16oz. fresh pineapple chunks, 2 teaspoons ginger, 2 tablespoons lime juice, 16-20 mint leaves, and ½ cup simple syrup.

    Blend everything into a smooth purée.

    Step 2: Muddle

    In a tall drinking glass, add a few lime slices and mint leaves. Muddle them gently to release the flavor of the mint leaves.

    Step 3: Add Purée

    Pour the 4-5oz pineapple and ginger purée into your glass along with a few ice cubes.

    Step 4: Add Sparkling Water

    Top your drink with sparkling water or club soda and give it a quick stir to combine. Serve immediately and enjoy!

    Expert tips

    • Start with a sweet and ripe pineapple! You can tell it’s perfect when the fruit has a lightly sweet aroma at the base and is a yellowish-green color. 
    • To make things easier on yourself, you can prep the pineapple, ginger, and mint purée ahead of time. Just keep it chilled in the fridge, covered, for up to 3 days. 
    • Here’s an important one: double or triple the recipe. However much you think you may need for your crowd, make a little bit more. Everyone will want seconds and thirds!
    • Make ice cubes out of pineapple juice! It’ll help keep your mojito mocktail cool without watering it down. 
    • If you’re like me and love ginger, swap regular simple syrup for ginger simple syrup. It’ll take the flavor to the next level!

    Can I use other fruits to make this mojito mocktail?

    You sure can, that’s the beauty of this recipe. You can make this recipe with strawberry, blueberry, blackberry, raspberry, watermelon, peaches, mangos, and more! Pretty much any fruity flavor you enjoy can be incorporated into this mojito recipe. 

    Can I use canned pineapple to make this mojito?

    Yes, you can use canned pineapple, however, fresh is best! It has the best flavor and juiciness possible.

    Serving Suggestion

    When I think of serving this drink, I think of a hot summer with friends, snacking on our favorite foods. Here are some of my favorite snacks and bite-sized treats that’ll keep your stomach full while you’re enjoying your pineapple mojito mocktail. 

    • Nuggets are always a favorite! Try these chicken nuggets or fish nuggets, served alongside some air fried sweet potatoes. 
    • Want something fresher? This peach salad with peppery arugula is just the thing.
    • Make some personalized naan pizzas so everyone can play a part in making the meal.
    • And we can’t forget cheese! These corn cheese balls and cheese veg fingers are always the first to go when I set them out at a party. 

    Storage

    Once these drinks are mixed with the sparkling water, they’re best enjoyed immediately. However, you can store the purée for up to 3 days in the refrigerator, or freeze the puree and pull it out when you have a mojito mocktail craving.
