- 16 oz fresh pineapple chunks
- 2 teaspoons ginger grated
- 2 tablespoons lime juice or as needed
- 16-20 fresh mint leaves
- ½ cup simple syrup or as needed
- few lime slices and mint leaves
- few ice cubes
- 20 oz sparkling water or club soda
In a blender, add 16 oz fresh pineapple chunks, 2 teaspoons ginger, 2 tablespoons lime juice, 16-20 fresh mint leaves, and ½ cup simple syrup. Blend to a smooth purée.
In a tall glass, add few limes slices and mint leaves. Muddle gently to release the flavor from the mint leaves.
Pour 4-5 oz of the prepared pineapple ginger purée and few ice cubes.
Top with sparkling water or club soda and give a quick stir to combine. Serve Immediately.
