    About Instant Pot Gajar Halwa

    Season's last red carrots and I am yearning for some halwa treat again. I know, in earlier traditional method gajar ka halwa post, I have mentioned the slow cooked version as my personal favourite.

    Truly speaking, I am short of time so much so that I do not have the patience to slow cook it on stove top.

    This instant pot carrot halwa recipe is a time saviour whenever you have guest arriving at home. The method indeed reduces 30-45 minutes for your time from the traditional method.

    Another super important point of this recipe is that you do not need Khoya or mawa. In most of the region of the around the globe, khoya is not available easily. So, this recipe is a winner in every sense.

    The recipe is super simple and easy. You can easily make this delicious carrot halwa even in Pressure cooker. Below, I have mentioned the step by step photos for both IP as well as pressure cooker method.

    Tastes as good as the slow cooked traditional gajar halwa.

    Top Tips

    Never cut down on ghee, it imparts rich flavour to the halwa.

    You can use juicy orange carrots as well as red Delhi Carrots.

    Always sauté the carrots in ghee first, the more you sauté them in ghee, the better is the taste. You can skip sautéing the carrots and add the ingredients (except nuts and condensed milk) and pressure cook.

    Saffron is optional but, you add it for more richer aroma and taste.

    Use full fat milk only.

    For vegan gajar halwa, option, use almond milk or cashew milk, sugar instead of condensed milk, and neutral oil or vegan butter.

    You can freeze the halwa in clean airtight container or clean ziplock for good 6 months and 2 weeks in refrigerator.

    Step by step instructions

    For Pressure Cooker

    First, heat ghee in pressure cooker. (photo 1)

    Then add grated carrot and sauté on high for 4-5 minutes or until carrot softens. (photo2)

    Add milk and bring it a boil. Add saffron, mix and pressure cook for 1 whistle and on low for 2-3 minutes. Switch off the gas and allow the pressure to release naturally (photo 3 and 4)

    Then add, milkmaid or condensed milk, cashew nuts, raisins, cardamom powder and mix. Sauté the halwa on high for 7-8 minutes stirring continuously to avoid burning. All the liquid should be dried up (photo 5)

    Gajar halwa is ready to serve. Dish out and serve warm as it is or with a scoop of vanilla ice cream (photo 6)

    For Instant Pot

    To begin with, press the Sauté mode. Once the IP displays 'Hot', add ghee to heat. Then, add grated carrots and sauté for 3-4 minutes. Carrot will start to soften. Photo1 and 2.

    Add milk and saffron, mix. Photo 3.

    Cover the pot with lid with pressure valve in sealing position. Cancel sauté mode and press manual/pressure cooker button and set the timer to 4 minutes. Photo 4.

    Once the IP beeps, let the pressure release naturally for 3-4 minutes and then do quick release manually by moving valve from sealing to venting position.

    Open the pot, press sauté button again. Now add condensed milk, cashew nuts, raisins and cardamom powder, stir.

    Continue to stir for 8-10 minutes until all the liquid is dried up. Stirring is important as to avoid the halwa getting stuck at the bottom of the pot. Instant pot gajar halwa is ready to serve. Dish out and serve warm or with a scoop of vanilla ice cream.

    • 1 kg Carrots (grated)
    • 1 cup Milk
    • 1 Tin Condensed Milk or 1 Cup Sugar
    • 12-15 Cashew nuts
    • 120 g Ghee
    • 2 tsp Cardamom powder

    • Raisins
    • A pinch of saffron

    Notes

    Add sugar as per the sweetness you like.
    Use your choice of favourite nuts for this recipe.
    For vegan option, substitute ghee with neutral oil or vegan butter, and almond milk cashew milk instead of dairy milk and sugar instead of condensed milk.
