    Egg bhurji or Anda Bhurji Recipe - the Mumbai street style quick egg recipes enjoyed across the city with the very famous pav. Egg bhurji is a delicious spicy scrambled egg recipe in Indian style. Eggs are tossed in onions, tomatoes, spices. One key ingredient that gives this anda bhurji a street style twist is pav bhaji masala and butter. In short of time and want to devour something really yummy and spicy? Then whip up the eggs in masalas (spices) and pair it up with pav, paratha or toast. Serve this spicy scrambled eggs for breakfasts or main meal, it will make you surely happy. So, here is how to make egg bhurji recipe step by step.

    Mumbai style Masala Egg Bhurji Recipe (Anda Bhurji Recipe)

    Eggs, eggs and eggs, something that makes me happy each time when I eat it. Being healthy and highly nutritious, eggs are always a great choice to start your day with. Eggs are very versatile and they transform themselves beautifully into any dish. Be it egg biryani, egg curry, egg pulao or this dry egg bhurji masala, they never fail to make you happy. In mumbai, many people do call this ande ki bhurji as an egg ki sabji also.

    But, one thing that really bothers me is that it should be cooked right into any dish. Like, if I am making an omlette, I cannot eat it if I see they are still runny :P. I like it to be cooked well. However, I do love eating half boiled eggs and even a sunny side up. But runny eggs in an omlette or masala egg burji is a big NO to me.

    Secondly, there is an egg OCD issue with me lol!  I hate eating large eggs, as it stinks when cooked, which I cant take it. My egg shop wala knows very well that I always buy small to medium eggs. Therefore he always get it for me 😛 .

    Omg! feeling nostalgic! Whenever I make egg bhurji at home here in Bangalore, I am straight into my childhood where we used to enjoy it with Mumbai pav. Nothing, trust me, nothing can beat the combo of masala anda bhurji with pav butter maarke, ufff, Blissss! I will be going to Mumbai next week In shaa Allah, my daily breakfast has to be Anda pav or kadak brun with butter and Chai. Oh, I miss this badly in Bangalore 🙁

    Egg Bhurji Ingredients:

    Coming back to egg bhurji recipe, as I am making mumbai street style anda bhurji recipe, I have added pav bhaji masala to it. But, if you do not have the stock of it, then you can swap it with garam masala powder. The variation that you can do to the recipe is, adding veggies like peas, capsicum, corn or whatever you would like to add into it.

    I have used ginger garlic paste also in this anda bhurji. But, you can opt to skip it. Tomatoes and onions are the soul of egg bhurji masala. But, if you have a dislike to any of these ingredients, feel free to skip it. Rest of the spices and powders are cumins seeds, red chilli powder, turmeric powder, and coriander powder. Green chilies and fresh coriander are not to skipped 🙂

    Finally, oil and yes, the addition of butter uplifts the simple egg bhurji to the street style ones. Serve it with pav, toast, parathas (Indian flat breads) or breads or dinner rolls, It will awalys be a healthy nutritious breakfast or supper to all the egg lovers 🙂

    Ingredients
     

    • 6 eggs
    • 2 onions (large , finely chopped)
    • 3 tomatoes (medium, finely chopped)
    • 4-5 green chilies (chopped or slit or crushed)
    • ¾ teaspoon ginger garlic paste
    • ½ teaspoon pepper powder
    • 1 teaspoon cumin seeds
    • ½ teaspoon turmeric powder
    • 1 teaspoon red chili powder
    • ¾ teaspoon coriander powder
    • 1.5 teaspoon pav bhaji masala
    • Salt to taste
    • 2 tablespoons oil
    • 2 tablespoons butter
    • Coriander leaves for garnish

    Instructions

    • Firstly, carefully, break the eggs in a bowl
    • Then, whisk it well and keep it aside
    • Now, heat oil in a heavy bottom and once the oil heats, add cumin seeds. Fry for few seconds until aromatic
    • Then add, onions and fry until soft and pink
    • Add ginger garlic paste and green chilies, fry for few seconds until raw smell goes off
    • Now, add tomatoes and saute on high for 2 minutes
    • Then, add red chilli powder, turmeric, corinader powder, salt and pav bhaji masala, mix well. Cover and cook for 2-3 minutes until masalas cooks well and raw smell goes off
    • Add pepper powder and butter, mix
    • Then add whisked eggs and stir to combine well, cook for 2-3 minutes until eggs re cooked
    • Finally, add green coriander and mix. Spicy Masala Egg Bhurji is ready to serve.

    How to make egg bhurji step by step
