Makai Paneer Pakoda is a delicious deep fried flavoured fritters of corn and paneer(cottage cheese). Bangalore has been on mood of getting chilly and wet all by rains past 3 weeks. no sign of Sunshine at all, its so gloomy dull and breezy. This has made me sipping atleast 4-5 cups of hot ginger tea in a day. Evenings makes me crave for some hot crisp deep fried pakodas/snacks with garam chai. Lots of pakodas, samosas, chaat, rolls, cutlets are menu for evening snacks at my place, Makai paneer pakoda is one of them. Makai paneer pakoda is an extremely easy, scrumptious crisp and spicy snack to be made in a matter of few minutes. Spiciness of this pakoda can be adjusted by add green chilies accordingly as per your preference. This can be relished best with mint-coriander green chutney or khatti meethi imli ki chutney. Paneer And Mixed Veg Cutlets/Patties
Ingredients:-
2&1/2 cups, corn
200 grams, paneer (crumbled to small cubes)
1/3 cup, onions, finely chopped
1/3 cup, coriander leaves, finely chopped
1 teaspoon, green chili, ground to a coarse paste
1&1/2 inch ginger piece, grated
1 teaspoon, cumin seeds
1/2 teaspoon, Ajwain (carom seeds)
1/2 teaspoon, red chili powder
1/2 teaspoon turmeric
7-8 tablespoon, chickpea flour (besan)
1 teaspoon lemon juice
Salt as per taste
Oil for frying
Method:-
First, grind corn to a coarse paste without adding any water. This can also be done in a chopper
In a large bowl, combine all the ingredients except oil, mix well
Heat enough oil in deep bottom pan. Once the oil is hot, make a small blob of a mixture and gently slide it in to hot oil. Fry on medium high heat until golden brown and crisp.
Take them out on absorbent kitchen towel. Repeat the same for the remaining mixture.
Serve them hot and crisp with green coriander-mint chutney or ketchup.
