Ingredients

  • 1 lime sliced or cubed
  • 8-9 mint leaves
  • 2-3 tablespoons mango cubes
  • 3 oz mango juice
  • 1 oz ginger simple syrup optional
  • ice cubes as needed
  • 1 cup sparkling water/club soda

Instructions

  • Add lime slices and mint leaves in a tall glass or pitcher and muddle gently to release their juices.
  • Add mango chunks and muddle again lightly to mash the cubes. Don't over-mash the mango cubes.
  • Pour mango juice, and ginger simple syrup and mix.
  • Now top with ice cubes and fill the remaining portion with sparkling water or club soda. Give it a quick stir.
  • Garnish with mint and serve immediately.

Notes

  • Use the freshest mango you can find! It won’t be stringy, just juicy and delicious!
  • If mangoes are out of season, you can use frozen or canned fruit.
  • Very lightly muddle your lime and mint before adding the mango chunks because if you muddle it too much it’ll get bitter.
  • If you don’t want to use ginger syrup, feel free to use honey or plain simple syrup.
  • Add some jalapeno or cayenne for a kick of spice!
  • You can use flavored sparkling water for an added layer of flavor.
