- 2 (5 oz) canned tuna drained and flaked
- 1 large diced avocado peeled, pitted, and diced
- ½ cup diced english cucumber diced
- ¼ cup diced red bell pepper diced
- ½ small sliced red onion sliced
- ½ chopped jalapeño seeds removed and finely chopped
- 2 tablespoons sliced green onion sliced
- 2 tablespoons chopped parsley finely chopped
Dressing
- 2 tablespoons extra virgin olive oil
- 1 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon dijon mustard
- ½ teaspoon salt or to taste
- ¼ teaspoon freshly ground pepper
In a small bowl or a jar, add 2 tablespoons extra virgin olive oil, 1 tablespoons lemon juice, 1 teaspoon lemon zest, 1 teaspoon dijon mustard, ½ teaspoon salt, ¼ teaspoon freshly ground pepper, and mix well. Set it aside.
In a large bowl, add 2 (5 oz) canned tuna (drained and flaked), 1 large diced avocado, ½ cup diced english cucumber, ¼ cup diced red bell pepper, ½ small sliced red onion , ½ chopped jalapeño, 2 tablespoons sliced green onion, and 2 tablespoons chopped parsley.
Pour the prepared dressing and stir gently to combine. Serve this delicious tuna fish and avocado salad as is or on toast. enjoy!
