Achari Gobi Recipe
Achari Gobi is delicious and spicy vegetarian curry recipe made with cauliflower and a flavorful blend of Indian pickling spice mix called achari masala. The dish is simple, easy to make and perfect for a quick weeknight dinner. Serve with roti, paratha or rice for a hearty Indian meal!

- 1 Cauliflower medium head - broken into medium florets
- 4 tablespoons Mustard Oil
- ½ teaspoon Cumin Seeds
- ½ teaspoon Fennel Seeds
- ¼ teaspoon Fenugreek seeds
- ½ teaspoon Nigella Seeds
- 1-2 Bay leaves
- A pinch of Asafoetida
- 1 Onion medium sized, chopped
- 1 teaspoon Ginger Garlic Paste
- 1¼ cup Tomatoes chopped
- ¼ cup Yogurt whisked well
- 1.5 tablespoon Achari Masala
- ½ teaspoon Turmeric powder
- 1 teaspoon Coriander Powder
- Salt to taste
- 2-3 Green Chilies slit
- 1 Lime juiced
- Fresh Cilantro chopped
Clean and wash the cauliflower florets well.
Heat mustard oil in pan or kadhai over high heat until smoky.
Add cumin, fennel, fenugreek, nigella seeds, asafoetida and bay leaves. Fry for few seconds taking care it should not burn.
Add chopped onions, fry until pink and soft.
Now, add ginger garlic paste and fry for 30 seconds until raw smell goes off.
Add cauliflower florets and tomatoes, sauté over high heat for 4-5 minutes until cauliflower florets are nicely sautéed.
Then, add whisked yogurt, mix well. Cook for a minute.
Add achari masala, turmeric powder, coriander powder, salt and mix.
Sprinkle few spoons of water, cover and cook for 10-15 minutes or until soft.
Finally add, green chilies slit, lime juice and mix. Cook for another 30 seconds.
Garnish with chopped cilantro and serve hot with parathas, rotis or puris.
- You can blanch clean and washed cauliflower florets in hot water with ½ teaspoon salt for 10-15 minutes to remove any hidden worms. Drain the water, rinse couple of times under running water.
- Feel free to pick store-bought achari masala pack if not a homemade mix is not handy.
- To make achaari gobi gravy, all you need to do is, grind tomato to a puree instead of chopping it and add little extra yogurt. Also, increase the amount of water as you like it to be thick or thin.
