Malpua
Malpua is delicious popular Indian Sweets from Northern region like Rajasthan, Orissa, UP, Bihar. It is a fried pancake dipped in saffron flavoured sugar syrup and served warm with rabdi or thickened milk.

- 1.5 cup All-purpose flour (Not heaped, it should be loosened levelled cup measure)
- 2.5 cup Milk
- 2 tbsp Yogurt whisked well
- 100 gms Khoya (mawa) khowa/mawa, grated
- ¾ tsp Fennel Seeds coarsely crushed
- ¾ tsp Cardamom Powder
- 3 tsp Sugar
- A pinch of saffron strands
- Pinch Of Soda
To shallow fry the Malpua
For sugar syrup
- 1 cup Sugar
- ½ cup Water
- ¼ tsp Cardamom Powder
- Few saffron strands
- Slivered almonds and pistachios for garnish
- Rabdi to serve with malpua
Preparation of Malpua batter
In a large bowl, combine all the dry ingredients in a bowl and mix.
Then, add yogurt, milk and khoya in the bowl.
Whisk very well to form lump free batter
Cover and keep the batter aside for an hour
In another pan, add all the ingredients mentioned for sugar syrup and bring it to boil.
Simmer on low heat for 10 minutes. Cover and keep it aside.
How to make Malpua
Heat ghee in a shallow pan. When ghee is just hot, reduce the flame to low.
Pour spoonful of a batter in medium hot ghee and fry.
Once the edges turn golden and crips, flip and fry on the other side
Repeat the same for all the batter
Dip the fried malpuas in warm sugar syrup for a minute or 2
Place on serving dish , top with Kesar Lachcha Rabdi and serve warm
