Ingredients

  • 4 tablespoons melted butter
  • 4 tablespoons raw sugar or brown sugar
  • 1 tablespoon lemon juice or lime juice
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon cayenne pepper
  • teaspoon sea salt
  • 1 pineapple peeled and cut into ¾ inch slices

Instructions

  • In a small bowl, add 4 tablespoons melted butter, 4 tablespoons raw sugar, 1 tablespoon lemon juice, ¾ teaspoon ground cinnamon, ¼ teaspoon cayenne pepper, ⅛ teaspoon sea salt, and mix well.
  • Pour the prepared glaze over pineapple slices, and ensure both sides are coated well. Let it rest for 15 minutes.
  • Heat the cast iron grill pan over medium heat (or an outdoor grill). Coat the pan (or grill gates) with little oil or cooking spray.
  • Grill the pineapple slices for 4-5 minutes on each side, basting once or more with the remaining glaze, or until golden and caramelized on both sides.
  • Remove from the grill pan and serve the way you like.

Notes

    1. Choose a good pineapple! When ripe, it’ll be a yellow-green color and will have a little give when you squeeze it.
    2. Make sure you use medium heat. If you grill the pineapple at too high a temperature, it’ll burn the pineapple on the outside and leave the inside uncooked.
    3. With that said, when you’re cooking it on medium heat, you can cook it to your desired doneness! I like to cook 4-5 minutes on each side, but you might like to go for 6-8 minutes.
    4. Leftovers will last up to 3 days in airtight container stored in the refrigerator. Eat it cold, or reheat it on the stovetop or the grill until it’s warmed through.
