Baked Tomatoes Recipe

Baked Tomatoes with cheese is simple, easy and the most delicious summer side dish (or appetizer) sure to be hit with guests at your breakfast or dinner table. They are soft, juicy, cheesy and just too tasty to resist!

Ingredients

  • 3 large Tomatoes cut ½ to ¾ inch thick slices
  • Olive Oil for brushing
  • Salt and Freshly Cracked Pepper to taste
  • ¼ cup Mozzarella Cheese grated
  • cup Parmesan Cheese grated
  • 2-3 Fresh Thyme Sprigs

Instructions

  • Pre-heat the oven at 400°F and line the baking sheet pan with parchment paper (you can also use shallow baking dish).
  • Place the sliced tomatoes on lined sheet pan, brush with olive oil and season salt and freshly ground pepper.
  • Top the seasoned tomato slices with grated mozzarella and parmesan cheese. Sprinkle fresh thyme over the slices.
  • Bake for about 6-8 minutes until cheese starts to melt and turns golden brown. Turn on the broiler for 1-2 minutes for more color on cheese (this is an optional step).
  • Allow the baked tomato to rest for couple of minutes. Garnish with fresh thyme or chopped parsley and serve immediately as a side dish, appetizer or for breakfast with toasted bread. Enjoy!
