Arugula Apple Pear Fall Salad

Ingredients

  • 7 oz Arugula
  • 3 oz Lettuce roughly torn
  • ½ cup Pecan Nuts halves or chopped
  • 2 Apples thinly sliced
  • 2 Pears thinly sliced
  • 3 oz Feta Cheese crumbled
  • ¾ cup Pomegranate Arils

Maple Vinaigrette

  • 4 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon Maple Syrup
  • 2 tablespoons Red Wine Vinegar
  • Salt and Pepper as needed

Instructions

For vinaigrette dressing

  • In a small mixing bowl, simply whisk together your ingredients to combine.
  • Store in refrigerator until ready to use.

Assemble salad

  • Arrange arugula and lettuce in a serving platter.
  • Sprinkle pecan nuts over the salad greens.
  • Layer the sliced apples, pears and then top it with crumbled feta and arils.
  • Just before serving, dress the salad with prepared dressing and serve immediately.
