  • 2 tablespoons Lime Juice
  • Zest of One Lime
  • 2 teaspoons Maple Syrup or honey
  • Salt and Pepper to taste
  • 1 lb Strawberries hulled and chopped
  • ½ Small Red Onion chopped
  • 1 Jalapeno seeded and chopped
  • ½ cup Cilantro finely chopped

Instructions

  • To start with, in a small bowl, combine a good quality olive oil, lime juice, lime zest, maple syrup, salt and pepper and whisk well.
  • In a large bowl, add chopped strawberries, red onion, jalapeno and cilantro. Pour the prepared dressing and toss well. Adjust the seasonings, only if needed (you can add more lime juice, salt or maple syrup).
  • Allow the salsa to rest for 10 minutes in the fridge before serving.
  • Enjoy this tasty strawberry fruit salsa on it's own as a salad, or snack, pair with tortilla chips or top it on nachos, grilled fish, chicken or tacos.

Notes

  1. Leftover salsa stays well into a clean airtight box up to 3 days in the fridge.
  2. If you don't like cilantro, swap it with some chopped fresh mint or fresh basil.
  3. Avoid using bottled lime juice to make this recipe, use fresh lime juice for the best taste.
  4. Use the jalapeno as per your preference for spice level, leave some seeds if you prefer more heat in your salsa recipe.
  5. You can also use serrano pepper, habanero or green chili as a substitute for jalapeno.
Feel free to jazz up your salsa with these fruits and vegetables as a variation or add-ins:
  • Fruits: Diced or chopped mango, avocado, pineapple, peach, nectarines, kiwi, tomatoes, blueberries, raspberries.
  • Vegetables: chopped cucumber, yellow or red bell peppers, grilled corn.
