Ingredients

  • 3 Ripe Peaches plus more for serving pitted and sliced
  • ½ - ¾ cup Granulated Sugar you may add more as per your liking
  • 2 teaspoons Lemon Juice
  • 8 cups Water divided
  • 1.5 tablespoons Loose Leaf Black Tea or 3 Tea Bags
  • Fresh Mint Sprigs for serving
  • Few Ice Cubes For serving

Instructions

  • In a high-speed blender jar, add sliced peaches, sugar, lemon juice and 1 cup water. Blend everything together until smooth.
  • Transfer the prepared peach mixture into a small sauce pan, heat and bring it to a boil. Once the juice boils, simmer for 30 seconds and then take it off the heat, our homemade peach syrup is ready.
  • Transfer the syrup in a pitcher. NOTE : As my peach syrup was smooth and free from any pulp or peel bits, I have skipped the step of straining it. If your mixture isn't smooth, then, strain the nectar using a fine mesh strainer.
  • In a medium sauce pan, add the remaining water and bring it to a point when it starts to bubble.
  • Add tea leaves and bring to boil, simmer for 2 minutes only. Beyond this time, the tea can get bitter. However, if you want the tea to be stronger, add more tea and brew for another 2 minutes.
  • Once brewed, switch off the heat and let it rest for 5-6 minutes. Strain out the tea leaves and add it to the pitcher with syrup, stir and refrigerate.
  • Put few ice cubes along with thin peach slices and few fresh mint leaves into serving glasses, stir and pour the iced tea mixture and serve!

Notes

Sweetness:
  • Peaches which I have used here were nice ripe and sweet, so ½ cup sugar gave enough sweetness to the iced tea as per our liking. Feel free to increase the sugar as per your taste.
  • You can substitute sugar with stevia, honey, maple syrup, or raw cane sugar.
Serving:
  • You can keep the peach syrup and brewed tea separate for serving. This way you can make your own drink by deciding how much you would like to add the syrup and tea.
  • Always add fresh peach slices to the serving glasses and not the pitcher. This keeps from making the fruit mushy and tea cloudy in the pitcher
Storage:
You can prepare the peach syrup or concentrate in a big batch and store in a clean glass bottle. It stays good up-to 2 weeks in the fridge.
