It’s been a month, I hadn’t updated my space here. April was a bit muddled month for us, quick decision, rush, arrangements and then shifting to a new place. Sleepless nights, worn-out body, messy house, no home cooked food, utterly drained us. Steadily, settling down, though not fully done, as things are still lying here and there. Nevertheless, will be back on track soon In Sha Allah!
Absolutely exhausted souls, needed something really quick, fruity and full of energy. Chilled Stone fruits and Coconut milk smoothie is all what you need to rejuvenate yourself. Utterly scrumptious meal, you just need to quick blend them all and its ready. I have used fresh apricot peach and plum here, but if you prefer you may use the canned or frozen ones too. Let’s quickly go through what you need to stir and get this super yum smoothie in no time!
1 cup, thick Coconut milk (you may add more as per the requirement)
1 cup, watermelon, deseeded and diced
1/2 cup, plum, deseeded and diced
1/2 cup, apricot, deseeded and diced
1/2 cup, peach, deseeded and diced
Honey to suit the taste (optional)
Add all the fruits in a blender one by one. Blend it to form a smooth pulp
Add coconut milk and stir in the honey as per your preferred sweetness, blend it to a pulse so that all combines well.
Add few ice cubes in serving glasses.
Pour the prepared smoothie in the serving glasses and serve immediately.
