Sooji ka halwa is delicious semolina pudding roasted and cooked in a ghee, sugar and aromatic seasoning. Sooji ka halwa has always been top in the list of desserts for most of our family members. Not only my family but probably every family’s first choice is Sooji Ka halwa when it comes to prompt celebrations or any occasion or on arrival of guest in every home. You might find the recipe bit different from the other ones but I can assert for its flavour, probably the best taste ever. Sweetness you may adjust according to your liking as some of you might like to have it sweeter. Generally, people do not add saffron, but it give fine aroma and richness to the halwa, so I would recommend you to add it. Let’s go through how to make this super delicious sooji ka halwa…

1 cup, semolina ( sooji)
1 cup ghee
1 cup sugar, you may adjust as per your liking
1 cup milk
1&1/2 cup water
1 teaspoon, cardamom powder
Saffron, a pinch
1/4 cup raisins
slivered nuts and dried rose petals(optional) as required
In a pan, heat 1/4 cup of ghee. Add semolina (sooji) and roast until aromatic and golden ( do not burn).
In another kadhai, heat remaining 3/4 cup of ghee, add cardamom and cloves and fry for few seconds Add raisins and fry lightly.
Carefully add a cup of milk. ( be careful while pouring it)
Add saffron bring it boil add sugar and mix.
Add 1 &1/2 cup and bring it boil. Once the mixture starts boiling add roasted semolina stirring continuously to avoid lumping. Mix well.
Cover and cook on low until all the liquid is absorbed by sooji, its soft and little released at the bottom is seen
Add cardamom powder and mix well. cook for another minute.
Take it off the heat
Dish and garnish with slivered nuts and petals. Serve hot.
