Methi turai ki sabzi is a dry preparation stir fried together along with mild spices. Methi turai ki sabzi can be served either with hot phulka/parathas or as a side dish along with dal-rice or khichdi, papad salad and pickle. I always make sure that methi is very frequent addition in our meals either in the form of dals, rice, khichdi, paratahas or as a sabzi due to its number of health benefits. Turai (ridge gourd) is mostly un-liked by many due to its bland taste, but this humble gourd is highly fibrous and full of nutrition. It is extremely rich in dietary fiber essential vitamins. It aids digestion, helps to relieve from constipation, acidity and ulcers. It acts as blood purifier and protects liver from intoxication.
Methi Turai ki sabzi is quick to cook and is ready in minutes with mild on spices and heavy on flavours and health.
500 grams, ridge gourd ( Turai) cut in 1 inch cubes
2 cups, fresh fenugreek leaves (Methi), roughly chopped
1 medium onion, finely sliced
1 teaspoon, cumin seeds
2 whole red chilies, each broken into 2
4 garlic cloves, coarsely crushed
2 green chilies, coarsely crushed ( you may adjust accordingly)
1 teaspoon, coriander powder
1/2 teaspoon, turmeric powderJuice of half lemon
1/2 teaspoon, garam masala powder
1&1/2 tablespoon oil
Salt to taste
In a heavy bottom pan or kadhai, heat oil. Once the oil is hot, add cumin seeds and broken red chilies. Allow them to crackle.
Add finely sliced onions and fry until pink and soft
Add coarsely crushed garlic, green chilies, turmeric powder and coriander powder, mix well. cook for few seconds
Add cubes turai and saute well on high heat for 3-4 minutes. Cover and cook 3-4 minutes on medium heat
Add methi leaves, garam masala powder, lemon juice, salt, mix well
Cook for 3-4 minutes oh high heat until all the water released by methi and turai dries up. Do not cover and cook at this stage.
Delicious Methi turai ki sabzi is ready to be served with hot phulkas, salad and pickle
