I have been neglecting this space for quite a some time. Family, guests, fun, feasts, travels, shopping occupied me and gave beautiful moments to cherish forever.
Now, am back to give time to my CnJ and come up with toothsome recipes.
Unfortunately, I am not a sweet-tooth person but sometimes I do crave for it and this time it was pudding’s turn to fulfil my crave. Desserts are sweets loaded with sugar but if it is made with healthy ingredients having ample amount of fibre, essential vitamins and minerals then its just as a perfect icing on a cake. Yes, you read it right, desserts can be healthy too. As you may find, the pudding I am sharing here has the rich nutrition of almond and oats embedded in it with the freshness of lemongrass and kaffir lime. The beautiful macerated berries gives it the perfect tantalising punch making it an irresistible sweet feast. Here is how we get it…
4 cups, mixed berries, fresh or frozen (I have used cranberries, blueberries, blackberries)
2 cups, water
1/2 cup, brown sugar
1 tsp, lemon zest
2 cups, low fat cream (I have used Amul)
3 cups, low fat milk
2 nos, kaffir lime leaves
1 1/2 tbsp, lemon grass, finely chopped
3/4 cup, oats meal
1/2 cup, almond meal
1/2 cup, sugar ( you may increase or decrease as per preference)
In a large bowl, combine berries, sugar, water,lemon zest. With a masher or back of spoon, mash it well
Cover and keep it aside for an hour.
Transfer it in a heavy bottom pan and cook for 4-5 minutes until it thickens slightly.
Take it of the heat and cool.
In a large pan, combine cream, milk and bring it to boil
Add lemon grass, kaffir lime leaves and simmer for 3-4 minutes.
Take it off the heat, cover and keep it aside 10 minute to infuse the flavour. Strain it.
Put it back in pan, bring it to boil, add almond meal, sugar and simmer for 2-3 minutes.
Add oats meal and macerated berries (reserve some for topping), keep stirring until combines well. cook till it thicken slightly.
Take it off the heat
Pour it in serving goblets, top them with reserved macerated berries
Chill in refrigerator for few house, preferably overnight to set and stabilise.
Garnish with chopped almonds and serve chilled.
