A quick crostini with freshness of green apples and cinnamon, tartness of lemon and apricot, topped with so cheesy soft camembert. Toasted crisp ciabatta makes a perfect base for this crostini. Here is how I have done it.
4-5, mini Ciabatta bread (each sliced into 2)
½ cup camembert cheese, grated or crumbled
1 cup, green apple, finely diced or chopped
¾ cup, apricot juice (I have used fresh juice)
2 tbsp, brown sugar (may vary as per preference)
Juice of ½ lemon
Zest of 1 lemon
A generous pinch of cinnamon powder
A generous pinch of nutmeg powder
In a pan heat together apricot juice, sugar. Once it starts boiling add lemon juice, lemon zest, cinnamon powder and nutmeg powder. Cook till it reaches jam consistency
Add chopped apple in pan and toss well on high heat such that apple get coated well with apricot jam. Take it off the stove and keep it aside. This will approximately 8-10 minutes
Toast ciabatta slices from both sides till crisp and brown. You can toast them either in a pan or in an oven. If using oven, toast them in preheated oven at 200 degrees for 6-8 minutes or till brown and crisp
Top each slice with glazed apples and then with grated camembert cheese.
Arrange them in baking tray and toast them another 3-4 minutes in preheated oven (200 degrees)or just till cheese melts.
Enjoy them warm and crisp.
Instead of apricot juice you can use any other fruit juice of your choice
If using canned juice either skip or add less sugar to it .
