Ingredients

  • 6 eggs
  • 2 large onions, finely chopped
  • 3 medium tomatoes, finely chopped
  • 4-5 green chilies, chopped or slit or crushed
  • 3/4 teaspoon ginger garlic paste
  • 1/2 teaspoon pepper powder
  • 1 teaspoon, cumin seeds
  • 1/2 teaspoon, turmeric powder
  • 1 teaspoon red chili powder
  • 3/4 teaspoon coriander powder
  • 1 & 1/2 teaspoon pav bhaji masala
  • Salt to taste
  • 2 tablespoons, oil
  • 2 tablespoons butter
  • Coriander leaves for garnish

Instructions

how to make egg bhurji recipe

  1. Firstly, carefully, break the eggs in a bowl
  2. Then, whisk it well and keep it aside
  3. Now, heat oil in a heavy bottom and once the oil heats, add cumin seeds. Fry for few seconds until aromatic
  4. Then add, onions and fry until soft and pink
  5. Add ginger garlic paste and green chilies, fry for few seconds until raw smell goes off
  6. Now, add tomatoes and saute on high for 2 minutes
  7. Then, add red chilli powder, turmeric, corinader powder, salt and pav bhaji masala, mix well. Cover and cook for 2-3 minutes until masalas cooks well and raw smell goes off
  8. Add pepper powder and butter, mix
  9. Then add whisked eggs and stir to combine well, cook for 2-3 minutes until eggs re cooked
  10. Finally, add green coriander and mix. Spicy Masala Egg Bhurji is ready to serve.
