A couple of months back I visited Dubai on a vacation. During my shopping spree banged into Carrefore and was amazed to see the fresh cranberries, blackberries and raspberries there. As these are difficult to find in India, I got greedy and made up my mind to carry as much berries I can back with me to India. So, there I was stuffing my bags with berries and got them frozen before I left Dubai. It was a while when I last did my baking exercise. So today, finally I could satisfy myself with baking and using the cranberries to make this delicious chocolaty brownie. So here is how I got them together …..
INGREDIENTS:- All the ingredients are at room temperature:-
85 gms, all-purpose flour
45 gms, unsweetened cocoa powder
1 cup, brown sugar, tightly packed
2 nos, eggs
100 gms, dark chocolate, roughly chopped
1 tbsp, instant coffee powder
¼ cup, olive oil
1/3 cup, cream (I have used Amul here)
¼ tsp, salt
½ tsp, baking powder
1 tsp, vanilla essence 3 tbsp, butter
¼ cup, pecan nuts, roughly chopped
¾ cup, cranberries fresh or dried (I have used fresh)
150 gms, cream cheese
2 tbsp, milk
Pre heat the oven at 180 degrees
Grease and line(with parchment paper) 8*8 inch baking pan
Beat together cream cheese and milk until smooth
Melt the chocolate along with butter and whisk well. Keep it aside
Sift together flour, salt, baking powder and cocoa powder
In bowl beat together oil, egg, coffee powder and sugar until smooth (2-3 minutes)
Add vanilla essence, cream, melted chocolate and mix well
Add flour mixture and whisk until combined well, do not over mix.
Fold-in pecan nuts and half cup of cranberries
Pour the batter in lined pan.
Pour the dollops of cream cheese mixture randomly over the batter and with back of the spoon give it nice swirl
Top the cream cheese mixture with the remaining cranberries
Bake them for 25-30 minutes or till the skewer comes out clean
Take them out and cool completely
Cut them in squares and enjoy them either with dollop of ice cream or as it is.
