Bakes, Bakes, and Bakes! Oh, I was so high on baking this month. This time its chocolaty nutty fruity flavours in a bake.Yes, I am talking about Chocolate Cake with Pecans and Prunes, luscious moist loaf cake is loaded with crunchiness of Pecans, almonds, some walnuts along with fruity tangy prunes. Make this cake a day ahead, as its flavours enriches next day which keep you indulged in delightful slice of this chocolaty bliss. Who wont fall in love with such a beautiful piece of heaven. Not only for yourself and family but you can gift it to your relatives and friends on any occasion.
Nuts can be added accordingly as per your choice to the cake. I have used Pecan nuts, but you can substitute it with walnuts. I have also added few kernels of walnut too.

½ cup, pecan nut, coarsely broken
¼ cup, almond flakes
½ cup, prunes, roughly chopped
¾ cup, butter
¾ cup, brown sugar
1 cup, all purpose flour, sifted and levelled
1/3 cup, cocoa powder
¾ tsp, baking powder
½ tsp, baking soda
3 nos, eggs, lightly beaten
1 tbsp, orange zest
1 tsp, vanilla extract
¼ tsp, salt
¼ cup, almond flakes
Preheat the oven at 170 degrees centigrade
Grease and dust 9×5 inch loaf pan.
Sieve together flour, cocoa powder, baking powder, baking soda and salt
Lightly dust the nuts and flakes with the flour
Cream together butter and sugar using an electric beater on a medium speed.
Add vanilla essence and mix
Add ½ of the lightly beaten eggs and mix for a minute.
Add remaining ½ of beaten eggs and orange zest. Mix well.
Add 1/3 of the flour mixture and mix.
Add ½ of the remaining flour mixture and mix.
Add the remaining flour mixture and mix until everything gets combined well.
Fold in the pecans, almonds and prunes.
Scoop out all the batter in the loaf pan, level it with a spatula and bake it for 15 minutes.
Take out the cake and sprinkle the flakes on the top.
Put it back in the oven and bake for another 30 to 35 mins or until it passes the skewer test
If you find the almonds getting over-browned on the top while baking, cover the top with an aluminium foil and proceed with the baking for the rest of the time.
Take it out and cool it for few minutes. Transfer it to the wire rack and cool completely.
Slice and serve with coffee, tea or warm milk.
