Those boiled pearls can be turned into scores of healthy eats, it can be porridge, soups, savoury porridges, salads, kheer…anything! Khichdi is something we all love it very much as it is the top comfort food we opt for, as it soothes our stomach, completely soul satisfying, healthy and easy to cook. The best thing is you can boil the barley pearls and refrigerate it up to a week or you can also freeze a bulk dividing it in a single portion. 100 gms, pearl barley
1/2 cup, dhuli moong dal (split husked green gram lentil)
1/2 cup, green peas
1/2 cup, carrot, cut in small cubes
2-3, green chilies, slit
1 medium onion, finely chopped
1 teaspoon, ginger, grated
1/2 teaspoon, turmeric
1/2 inch stick cinnamon
5-6 black peppercorns
1 bay leaf
2 tablespoon, dill leaves (suva bhaji) finely chopped
Salt to taste
1 tablespoon, ghee
1 teaspoon cumin seeds
1&1/2 tablespoon ghee
Fried onions and green coriander for garnish
Clean and wash barley well
Add 4 cups of water and bring it to boil, simmer it for 15 minutes.
Take it off the heat
In a pressure, heat ghee, add cinnamon stick, peppercorns and bay leaf. Fry for few seconds
Add onions and green chilies and saute well for few minutes
Add ginger and saute for another half a minute
Add green peas and carrot, sauté for few minutes.
Add turmeric and moong dal, mix well.
Add boiled barley along all it’s water. Mix well
Add enough water, salt and mix, bring it to a boil
Cover cook for few whistles until just done and has a porridge-like consistency.
Allow it to stand for few minutes to release all the pressure
Adjust the consistency and seasonings as per the requirement, add dill leaves and cook for another minute.
Take it off the heat
In a small pan, heat 1&1/2 tablespoons of ghee
Add cumin and allow it to crackle.
Pour the tempering over the khichdi
Dish out, garnish with fried onions and coriander leaves. Serve hot with some salads or raita and lemon on the sides.
