Cauliflower and potato simmered in almonds and spices.
1 medium, cauliflower, broken into florets
4 medium, potato, each cut in 4 cubes
½ cup, yoghurt
1tsp, maida 1tsp, cumin seeds
¼ cup, milk
a generous pinch of Saffron
1tsp, red chili powder
½ tsp, turmeric
2-3 nos, green chilies, slit
1tsp, garam masala powder (I have used kitchen king) 1 tsp, coriander powder
1 nos, bay leaf
1tsp, lemon juice
2 tbsp, oil 1 tsp, kasuri methi
Salt as per taste
Water as required
2 medium onions, chopped
1 large tomato, chopped
1 tsp, cumin seeds
4-5 nos, black peppercorns
3-4 nos, green cardamom
3-4 nos, cloves 1 nos, black cardamom
½ blade, mace
¼ of small seed, nutmeg
1 stick, cinnamon of 1 inch size
15-18, almonds, blanched and peeled
1 inch piece, ginger
4-5 nos, garlic cloves
1 tbsp, oil
Slightly prick the cut potatoes and immerse them in slightly salted water for 15-20 minutes.
In a pan, heat oil. Add chopped onion, fry till translucent.
Add ginger, garlic, tomato and all the other dried masala mentioned above for grinding. Fry them well till raw smell of goes off and tomato become soft. Take it off the stove and cool. Once cooled grind them to fine paste.
Soak the saffron in warm milk and keep it aside
In another heavy bottom pan , heat ghee. Add cauliflower florets and fry them well till light golden brown.
Take them out and keep it aside.
In same pan add oil and heat. Add bay leaf, cumin seeds and allow it to crackle.
Add potatoes and saute well on high heat for 2 minutes, stirring well
Add ground masala, sauté for another minute. Add ¼ cup of warm water, cover and cook till potato is 60% done. Stir in between to avoid burning
Add tsp of maida to whisked yoghurt and mix well. Keep it aside
When potato is half done, add cauliflower florets, mix
Add whisked yoghurt mixture, stir till it is combined well with masala.
Add red chili powder, turmeric, coriander powder, ¼ cup of warm water. Cover and simmer for 5minutes.
Add garam masala, green chili slit, lemon juice, salt, crushed kasuri methi and mix. Cook for a minute.
Finally add saffron soaked in milk and mix. cook for a minute
