Come summer and you ought to look out coolers and drinks that would keep you cool.  The good part is that summer also brings along mangoes with it. Raw or Ripe mangoes are so versatile that you can enjoy them in any avatar. The Aam ka Panna is a traditional Indian cooler specially made during summers due to the natural tendency of Raw mangoes to absorb the heat and keep the body cool.  Add to it the most important property of being one of the best digestives.
There are numerous ways of making Aam Panna and almost every house making it would be making it in a different way using cardamom, jaggery, chilies and so on….The below one is the one which I have been seeing in our family history.

INGREDIENTS:-

650 gms, Raw mangoes
6 cups + 3 cups, water
½ tsp, black pepper powder
¾ cup, mint leaves
2 tsp, rock salt
1 tbsp, roasted cumin powder
7 tbsp, sugar or jaggery (may vary as per sweetness preferred)

METHOD:-
Wash the mangoes and cut them into halves.  Discard the seeds.

Boil the mangoes with 6 cups of water until they are soft.  You may either pressure cook it or boil it in a heavy bottom utensil.

After they are done, peel them and discard the peel.  Do not discard the water.

Using the back of a ladle or hand blender, mash them to make a smooth pulp.

Add 3 cups of water and sugar/jaggery, mix till it gets dissolved.

Take few tbsp of pulp and blend the mint leaves, cumin powder, black pepper, rock salt to make a smooth paste.

Add this paste to the remaining pulp.  Mix well.

Add ice cubes or chill it in a fridge before serving.

You may adjust the seasoning as preferred.

Pour them in glasses and served chilled to quench the severe summer thirst.
