Kurkuri Bhindi

Crispy fried  bhindi(okras) which can be enjoyed hot and crisp as a side dish with your meal or as a snack. 




INGREDIENTS:-
For marinade:-
500 gms, bhindi(okra), lengthwise cut in quarters
½ tsp, turmeric
1 tsp, red chili powder
1 tsp, garam masala powder
1 tbsp, lemon juice
½ tsp, dry mango powder (amchoor)
1 tsp, kasuri methi (slightly roasted and crushed)
1 tsp, garlic paste
3 tbsp, yoghurt
A generous pinch of asafoetida(heeng)
Salt as per taste
For coating:-
½ cup, chickpea flour (besan)
½ cup, rice flour
1 tsp, red chili powder
Salt as per taste
Oil for frying




 METHOD:-

In a bowl mix together all the ingredients  except bhindi to form a marinade

Add quartered bhindi in marinade, mix well. Bhindi may become bit slimy, but that’s fine.

Cover and keep it aside for 15- 20 minutes.

In deep pan or kadhai heat oil

Meanwhile prepare a coating by evenly mixing the ingredients mentioned above for coating.

When oil is hot, take the marinated bhindi and coat each of them well evenly with coating mixture and deep fry in hot oil till golden brown and crisp.

Take them out and drain on kitchen towel. Do this in batches, please do not over laod the kadhai with bhindi

Enjoy them hot and crisp as a side dish with your meal or as a snack.

NOTE:-
If you prefer to make it without garlic, just skip it and proceed with rest.

  4. Hi Farrukh Ji, I followed your kurkuri Bhindi recipe and prepared fried bhindi. They are super hit in my family and everyone loved it. I was not sure if I should add water to the coating or not...so just skipped adding water and coated bhindi in dry coating. Can you please guide me if I should add water to the coating ingredients ?

      No..i did not add any water to coating ingredients..its a dry coating...bhindis itself marinated well in other ingredients and its slimy too...so it will get coated well with dry ingredients...not really needed to add water...you have done fab job :)

  5. Hi Farrukh, Though I have made kurkuri Bhindi but this time I decided to follow your recipe..and I must say they turned out to be excellent.The spices were just perfect..Everybody loved it. Thank you so much for sharing such nice recipies..
