NECTARINE SOUP WITH CHICKEN AND RED LENTILS

A perfect soup to pamper you during these winter blues. A hot soup, low on fat, full of protien is just what you want to enjoy on a chilly evening..



INGREDIENTS:-
2 nos, nectarine, roughly chopped
½ cup, red lentils
¼ cup, rolled oats
¾ cup, chicken, boiled and shredded
4 cups, chicken stock
1 nos, medium onion, chopped
1 nos, large tomato, roughly chopped
2 stalks of celery
3 nos, Kaffir lime leaves
5 nos, garlic cloves, crushed
½ tsp, red chili flakes
½ tsp, cumin seeds
5 nos, black peppercorns
Juice of one large lemon
1 tbsp, white butter
Salt as per taste

For Garnish
Shredded chicken
Crushed black pepper
Chili flakes
Croutons - I used my home mode "Brown Bread Croutons with Garlic and Herbs"


METHOD:-
Wash, soak red lentil for 30 minutes.

In a heavy bottom pan, heat butter. Add bay leaf, cumin, allow it to crackle. Add garlic and fry till brown

Add black peppercorns onions and fry till translucent. Add nectarines and red lentils and fry for 30 seconds

Add kaffir lime, celery stalk, tomatoes, chili flakes, chicken stock. Bring it to boil. Cover and simmer till all the ingredients are cooked well.

Take it off the stove. Discard kaffir lime leaves and with the hand blender, blend the soup coarsely

Transfer again on the stove, add salt and shredded chicken. Bring soup to rolling boil. Add oats and let it boil for 4-5 minutes.

Pour the soup in the bowl to be served. Garnish with some shredded chicken, red chili flakes, crushed black pepper. Enjoy them hot with herbed garlic croutons.

NOTE:- You can adjust the consistency of the soup as preferred.
