TOFFEE LEMON SHORT BREADS

This is my another goodie for kids. Kids can enjoy this anytime and could be a wonderful treat for Children’s day or Christmas. The three layers of shortcrust, toffee and chocolate nuts give you a unique texture and taste as you bite through them one after the other. 







INGREDIENTS:-
For shortbread:
All-purpose flour…………………………………….175 gms
Unsalted butter……………………………………..115 gms (room temperature)
Confectioner’s sugar………………………………55 gms
Lemon juice………………………………………… juice of one lemon
Lemon zest…………………………………………..zest of one lemon
Salt…………………………………………………… ¼ tsp
For toffee layer:-
Butter toffees………………………………………225 gms
Condensed milk…………………………………..3 tbsp 
Butter………………………………………………2tbsp
For chocolate layer:-
Dark chocolate……………………………………200 gms
Lemon zest……………………………………….zest of one lemon
Pistachios and almonds………………………..2 tbsp (slivered)









METHOD:-
For shortbread layer:
Mix the butter, sugar, all-purpose flour, lemon juice, lemon zest and salt with the fingers until mixture resembles bread crumbs.

Then transfer mixture on work surface and knead very gently to bring them together to form a ball (Don’t knead it too much with your palm)

Wrap the dough in plastic wrap and refrigerate it for 30 mins

Preheat the oven at 170 degrees

Grease the 9*9 inch square pan

Place the dough in the center of the pan, press the dough with your hand to form a shape and size of pan. Press the top to make uniform layer

Bake it for 25 minutes or till done

Toffee layer:-

In a pan, melt butter, toffees and stir. Simmer till toffee melts, add condensed milk and stir until combines well. Stir occasionally to avoid burning

Pour the melted toffee mixture over the shortbread and chill in refrigerator till set

Chocolate layer:-
 
Melt the chocolate in a double boiler. Once chocolate has melted, take it off the boiler

Add lemon zest and mix. Cool it slightly(should be warm and pouring consistency) pour over the chilled toffee layer. Also sprinkle chopped nuts over chocolate before it gets cooled and set.  Chill it in refrigerator for sometime

Cut into squares with sharp and pointed knife

Delicious treat is ready to be served
