SOYBEAN RICE (PULAO)

A rice dish made with chunks of soybean and a variety of spices. A very easy recipe and is a healthy  and protein rich diet for vegetarians and non-vegetarians as well.



INGREDIENTS:-
Rice (basmati-long grain)…………………………………3 cups(approx. 500gms)
Soya chunks……………………………………………….1 cup
Green peas…………………………………………………3/4 cup
Onion………………………………………………………..2 medium (thinly sliced)
Ginger garlic paste………………………………………….2 tsp
Green chili paste…………………………………………….1 tsp
Green chili (whole) …………………………………………4(slit)
Yoghurt……………………………………………………..1/2 cup
Tomato………………………………………………………2(lengthwise each cut into 4)
Lemon juice…………………………………………………juice of one lemon
Cinnamon………………………………………………….2 inch stick
Black peppercorn…………………………………………8-10
Cloves………………………………………………………5
Green cardamom………………………………………….5
Black cardamom……………………………………………2
Bay leaf……………………………………………………..1
Cumin seeds………………………………………………...1 tsp
Star anise…………………………………………………….1
Fennel powder………………………………………………1 tsp
Garam masala powder……………………………………..1 tsp
Mint leaves…………………………………………………..2 tbsp
Oil……………………………………………………………..3tbsp
Ghee…………………………………………………………..2 tbsp
Water………………………………………………………….6 cups
Salt…………………………………………………………….as per taste







METHOD:-
Boil the chunks with little salt (10 minutes). Drain, rinse once again and squeeze to remove excess water

In a vessel, heat oil and ghee together. Add bay leaf, cinnamon, green and black cardamoms, cumin, peppercorns, cloves and star anise. Allow them to crackle

Add onion and fry till light golden. Add soya chunks and sauté on high heat till they turn slightly golden. Add ginger garlic paste, green peas, green chili paste fennel powder and fry for another minute

Add whisked yoghurt, and stir continuously till yoghurt combines well

Add garam masala powder, salt, lemon juice, mint leaves and fry for a minute

Add 6 cups of water and bring it to boil. Add green chili slit, tomatoes and rice

Cook till 90% water dries up

Cover and simmer till done

Your healthy yummy Soybean pulao is ready to be served

Garnish with fried onions, coriander and enjoy with Chutney, pickle and raita of your choice
