PLUM SAUCE

I made this sauce to go along with my herbed fish filet. It has a lovely tangy, sour and sweet flavors in a mix and can be enjoyed with any form of roasted or grilled chicken, lamb or vegetables.



INGREDIENTS:-

Plum……………………………………….300 gms (deseeded and finely chopped)
Garlic cloves………………………………  5  (finely chopped or crushed)
Ginger……………………………………...  1 tsp (Grated)
Lemon juice……………………………….. 1 tbsp
Sugar……………………………………….1 tsp
Red Chili flakes…………………………….½ tsp
Soy sauce…………………………………..1 tbsp
White pepper powder………………………½ tsp
Oil…………………………………………….1 tbsp
Salt……………………………………………As per taste


METHOD:-

In a sauce pan, heat oil.  Add garlic and fry till light golden brown.

Add ginger and plum, sauté well.

Add lemon juice, white pepper powder, salt and sugar, mix.

Add ½ cup of water, cover and simmer till plums are soft.

Take it off the stove, cool and blend to puree. Transfer it to pan.

Add soy sauce, red chili flakes and cook for another minute.

They are ready to be enjoyed with any kind of sea food, poultry or meat.

Remaining can be stored in air tight container and refrigerated for further use.
