PANI PURI

PUCHKAS/GOL GUPPAS

PANI PURI - Pani puris made from scratch.


Pani puris have the following main ingredients

PURIS



STUFFING

INGREDIENTS:-
Potatoes..........................................................1 cup (Boiled and coarsely mashed)
Boiled chana(Bengal gram)...........................½ cup
Coriander powder...........................................½ tbsp.(Seeds roasted and coarsely grinded)
Roasted cumin powder..................................½ tsp
Chili flakes or powder.....................................½ tsp
Chat masala.....................................................½ tsp
Rock salt(Black Salt)........................................ As per taste
Normal salt....................................................... As per taste

Mix all the above ingredients well.             
    

GUR(JAGGERY) KI MEETHI CHUTNEY



PANI

INGREDIENTS:-
Fresh Coriander leaves……………………….1 cup (packed)
Fresh Mint leaves………………………………½ cup (packed)
Cumin seeds…………………………………….1 tsp
Chat masala…………………………………….2 tsp (may vary as per choice)
Tamarind pulp…………………………………..4 tbsp
Lemon juice……………………………………..Juice of 2 lemons
Rock salt(Black salt)……………………………1 tsp
Sugar…………………………………………….2 tsp
Salt……………………………………………….As per taste
Garlic…………………………………………….4 cloves
Ginger……………………………………………1 inch piece
Green chili………………………………………2 nos (may vary as per choice)
Water……………………………………………..4 cups
Boondi(Gram flour pearls)……………………...For garnish
Ice cubes…………………………………………Few


METHOD:-
Grind all the above ingredients except water, boondi and ice cubes to a fine paste.

Mix 4 cups of water to the prepared paste. Mix well to form the pani for pani puri.

Adjust the seasoning if required as per your choice.

Add few ice cubes and garnish with boondi.



ASSEMBLY:-


Take a puri and with the help of thumb make a opening on the top carefully.

Fill the puri with the stuffing as required.

Add few drops of meethi chutney.

Add good amount of pani and immediately enjoy them crispy, sweet, spicy and tangy (Chatpati)
