ACHARI BHINDI

Pickle flavored Okra

A simple yet delicious dish of Okra with the flavor of pickle and tempering of panch phoran.  Panch phoran is a mixture with equal amounts of Fennel seeds, Fenugreek seeds, Cumin seeds, Mustard seeds and Nigella seeds. For the pickle flavor, achari masala is used which is my home made present here



INGREDIENTS:-
Okra (bhindi)………………………………..500 gms(small sized)
PanchPhoran……………………………..1 tsp
Onion………………………………………2 medium (finely chopped)
Tomato……………………………………..1 large(finely chopped)
Garlic paste………………………………… 1tsp
Turmeric…………………………………… ½ tsp
All-spice powder(garam masala)………… ¾ tsp
Lemon juice………………………………….juice of one lemon
Achari masala……………………………… 1 tbsp ( I have used my homemade masala)
Mustard oil……………………………………. 3 tbsp
Salt…………………………………………….as per taste



METHOD:-

Wash, wipe and trim both the ends of okra.

In a heavy bottom pan or kadhai, heat oil till smoky. Lower down the heat to minimum.

Add panch phoran, allow them to crackle. Add onion and fry till soft and translucent

Increase the heat to high, add okras and sauté for 3-4 minutes stirring well.

Add tomatoes, garlic paste, turmeric and fry well

Add garam masala, achari masala, salt and lemon juice, mix well. Reduce the heat and let it 
cook for few minutes

If masala sticks to bottom, just sprinkle few drops of water

Stir well and cook till okras are done                           

Dish out and enjoy hot with phulkas, parathas or nan

NOTE:-
Instead of mustard oil, you can also refined vegetable oil.

Cook these okras uncovered.
