CREAMY TOFU TOMATO BISQUE

Bisque is basically French origin soup, having vegetables and some beef, chicken or seafood cooked together and the blended to puree.

 Here in Bangalore, nowadays the weather is rainy with sudden climate change. I am very much allergic to this condition which made me down with cold and fever. In such condition a soup can do what medicine can’t do, a healthy soup can soothe you and make you feel relaxed. So today I thought of making this soup which is very healthy, soothing and yummy too. It has vegetable, tofu, lot of herbs and a chicken broth.




Here’s the recipe

INGREDIENTS:-
Tomatoes………………………………………500gms(finely chopped)
Tofu……………………………………………..100gms(blended to puree)
Cream……………………………………………50 ml
Butter/olive oil……………………………………2 tbsp
Bay leaf…………………………………………..1
Garlic finely chopped……………………………1 tbsp
Onion……………………………………………..1 medium finely chopped
Celery……………………………………………..few sprig(fresh)
Basil……………………………………………….4-5 leaves(fresh)
Oregano……………………………………………5-6 leaves(fresh)
Cornflour……………………………………………1 tbsp
Chicken broth……………………………………….3 cups
salt and black pepper powder……………………as per taste

         
                                                               
METHOD:-

In a pan, heat butter or oil, add bay leaf, finely chopped garlic and fry till golden brown.

Add onion and fry till translucent. Mix cornflour with 4 tbsp of water and add this to the onion. 
Whisk well to avoid lumps.

Add chicken broth and let it come to boil. Add tomatoes, herbs and tofu and simmer for 15 minutes

Once done, take it off the stove, remove bay leaf and herbs, blend it to smooth puree

Add cream, salt and pepper to taste

Enjoy your piping hot bisque….

NOTE:-
Instead of chicken broth you can also use vegetable broth if you prefer.
If you prefer you can strain the puree, add cream and seasoning and enjoy
