BABY POTATOES WITH CHILI AND HERBS

A dish which is very easy to prepare and is full of flavours. It is a great appetizer or a snacker for  vegetarians and can be enjoyed any time. Do give it a try and I am sure you will love it…




INGREDIENTS:-
Baby potatoes…………………………………….18-20
Butter or olive oil………………………………….2 tbsp
Chili flakes…………………………………………1 tsp
Black pepper powder…………………………….. ½ tsp
Rosemary………………………………………… 1 tsp (dried or fresh)
Thyme(dried)……………………………………… ½ tsp
Lemon juice……………………………………….. 2tsp
Salt ………………………………………………… as per taste




METHOD:-
Clean the potatoes well. Prick the potatoes all over.

Boil with some salt and peel them (do not over boil it, should remain intact and not mushy)

In a pan, heat butter or oil, add boiled potatoes and sauté on high heat till golden brown

Add lemon juice, black pepper powder and sauté for few seconds on high heat

Finally add salt, rosemary, thyme and chili flakes, toss well for few seconds

Serve hot with cilantro-mint cheese dip or the dip of your choice
